
Lamb's lettuce salad with Tomme des Cazelles pure ewe's milk cheese, apples and hazelnuts

Ingrédients
100g lamb's lettuce
50g Gabriel Coulet plain tomme cheese
1 apple (Granny Smith or Golden)
30g hazelnuts
1 tbsp. honey
1 tbsp. wholegrain mustard
2 tbsp. olive oil
1 tbsp. cider vinegar
1 tbsp. raisins
1 tsp. sunflower seeds
Salt and pepper

Wash the lamb's lettuce and spin dry.
Cut the tomme into thin sticks.
Wash and thinly slice the apple.
Optional: Dry-roast the hazelnuts in a pan for 2-3 minutes, then coarsely crush them.
Prepare the vinaigrette: in a bowl, combine the mustard, honey, cider vinegar and olive oil. Season with salt and pepper.
Assemble the salad: mix the lamb's lettuce, tomme cheese, apples, raisins, sunflower seeds and hazelnuts in a salad bowl. Add the vinaigrette and toss to combine.
Arrange on plates and enjoy!
