Gabriel's Emotions are pure ewe's milk cheeses that you can enjoy at any time, without moderation. Flavoured pressed cheeses and cheeses for salads that are also available organically.
Our manufacturing secrets
As with our Tommes Naturels, the milk comes from the Roquefort PDO collection, from farms located around the cheese dairy. After pasteurising the milk, the cheesemaker adds the lactic ferments. The milk is then matured for several hours to allow the ferments to develop. The curds are then cut and gently stirred by hand! Finally, it is moulded before being immersed in brine, where it is salted to give it that fresh, unique flavour.

Our tommes are flavoured to bring out the best in the cheese without altering it, giving you round, fruity flavours. Discover our Salad'Aperos too!
