
Bite-sized Roquefort PDO cheese, pear compote and cured ham

Ingrédients
100 g Gabriel Coulet Roquefort
2 ripe pears
1 tbsp. honey
1 knob of butter
3 slices of cured ham
6 small pieces of toast (sandwich bread, nut bread or gingerbread)
A few chopped walnuts (optional)

Peel and finely dice the pears.
Brown in a frying pan with the butter and honey. Simmer over a low heat until melted. Set aside and leave to cool.
Using a cookie cutter, place the Roquefort cheese on top and press into the base. Place a spoonful of cooled pear compote and a thin slice of nicely rolled cured ham. Remove the cookie cutter.
Add a few crushed walnuts for crunch, raisins and crackers and serve on a pretty platter.
