Ingrédients
2 beef fillets
100g Gabriel Coulet Roquefort
20cl single cream
10cl milk
1 knob of butter
Salt and pepper

Melt the Roquefort over a low heat in a saucepan with the milk and cream. Stir until the sauce is smooth.
Melt the butter in a hot frying pan and sear the beef fillets for 2 to 3 minutes on each side (or longer, depending on how cooked you prefer them). Season with salt and pepper.
Serve immediately with the hot Roquefort sauce.
