We let some of our Tommes pur brebis mature for up to 16 weeks to reveal all the richness of sheep's milk. This long maturing process develops intense, refined flavours, offering a real aromatic bouquet for lovers of pressed cheeses with character. Under its natural rind, a firm, melt-in-the-mouth cheese is revealed, the promise of an authentic, gourmet experience that will delight the most demanding palates.
